Taro Demi Baguette

Taro is utilized three ways in this hybrid sourdough-poolish baguette: Poi is prefermented in a yeasted poolish, the sourdough levain made from Makani Mill's exclusive taro plant sourdough culture, and kalo flour made from locally grown kalo and milled by Makani Mills is incorporated as a portion of the total flour in the baguette.
