What is a Bialy (bee-AH-lee)? Often described as a bagel without the hole, but it’s really more of a cousin than a sibling to bagels. They are simply baked rather than boiled and have a depression in the center instead of a hole. Traditionally, the depression is filled with a blend of onion and poppy seeds.
Our take on the classic bialy is a reflection of this place- an ‘ulu dough flavored with ground fennel and a cashew chive cream cheese is layered below the caramelized local onion and poppy filling, all topped with a light sprinkling of coarse salt.
